At this point, the dome (which looks like a sphere to me) is built, and the internal volume is closed.
I shall start my reflection with what is mandatory: you need isolation from the rest of the bar. Here, you achieve it with the surface of the sphere itself — the energy won’t come in, but it won’t get out either.
Being inside such a mathematical shape gives you a focal point at the center and a whispering gallery effect at the periphery. Now, you don’t want to end up with a recording booth or an anechoic chamber, and neither would I. So now what?
The sheetrock partition is not in the right place. This projection surface should be acoustically transparent, and diffusion/absorption should take place behind it, in a “waste volume” that would be isolated from the bar.
This is my point of view, but again, congratulations.
